Dinner
Roasted acorn squash
Cut squash in half. Drizzle lightly with olive oil. Season with salt, pepper, and cinnamon. Place face down on greased cookie sheet. Bake at 400 for 45 min – 1 hr.
Zucchini Roll ups
1. Preheat grill or grill pan to medium.
2. Discard the outermost slices of zucchini; brush the rest with oil on both sides. Sprinkle the zucchini slices with salt and pepper. Grill until tender, about 4 minutes per side. You can prepare the zucchini a day ahead and store it in an airtight container in the refrigerator.
3. In a small bowl, combine the goat cheese, parsley, and lemon juice, mashing together with a fork.
4. Put 1/2 teaspoon of the cheese mixture about 1/2 inch from the end of a zucchini slice. Top with a few spinach leaves and a small (or half of a large) basil leaf. Roll up and place seam side down on a platter. Repeat with remaining zucchini slices. You can make these up to a day in advance; store in an airtight container in the refrigerator.
Roasted Curry Cauliflower
Ingredients -
2 tablespoons olive oil
1 tablespoon fresh lemon juice
1 tablespoon curry powder
1/2 teaspoon salt
1/4 teaspoon cayenne
1 head cauliflower, cut
fresh cilantro leaves
Preparation -
Mix all ingredients except for cilantro. Bake at 450 for 25-30 min. Garnish with cilantro.
Strawberry and goat cheese salad
Plate of mixed greens ( any type)
½ cup sliced strawberries
1/8 cup goat cheese
toasted almond slivers
chopped fresh basil
homemade vinegrette (olive oil, red wine vinegar, sugar, salt, white pepper)
Soup
Cut butternut squash in half. Slice onion into 4 large sections. Cut apple in half. Season all with salt and pepper. Place face down on a greased cookie sheet. Bake at 400 for 45 min – 1 hr.
Heat vegetable broth on the stove. Add squash, onion, and apple. Bring to a boil. Season with salt, pepper, and garam masala (Indian spice mix)
Transfer to blender and blend until smooth. Add a splash of almond milk if desired.
Served topped with fresh cilantro
Hearty oatmeal
½ cup dry oats (steel cut or regular). Boiling water. Add fruit and chopped nuts.
Ex: ½ chopped apple, 1/8 cup chopped pecans, sprinkle of cinnamon, splenda or honey
Ex: ½ cup bluberries, 1/8 cup chopped almonds
Scrambled Tofu
1/3 package firm tofu, cubed. Scramble with assorted veggies and herbs.
Ex: Mexiscramble – ¼ cup chopped tomatoes, ¼ cup chopped peppers (red, yellow, or green), 1/8 cup chopped onions, salt, pepper, chopped fresh cilantro. Top with salsa
Ex: Italiascramble – ¼ cup chopped tomatoes, 1/8 cup feta cheese or goat cheese, chopped fresh basil. Salt, pepper.
